Coconut Yoghurt

I still remember the day when an Australian Sales Rep for Coyo Coconut yoghurt introduced us to their Coconut yoghurt.  I had never tried Coconut yoghurt before, but it was some of the yummiest, creamiest deliciousness I have tried!  Then he shocked us with the price – $9.95 for 350 grams.

My colleague Kerry said “I’m sure I can make that!”  And she did!  She bought in some of her delicious home made Coconut yoghurt for us to try, with a berry coulis.  It was as good (if not better) than the one we had tried AND Super easy to make.

Here are the Step by Step instructions of my latest attempt.  I am thoroughly impressed with the outcome and doubt I will be buying Coconut yoghurt in the future, especially now that I can make it overnight in my yoghurt maker.

How to make Coconut Yoghurt

Step 1. Add Kara Coconut Cream & Probiotic into container

Step 1: Kerry determined that the Kara Coconut Cream is the best one to use and I thoroughly agree with her.  In this recipe, I use the 1 litre UHT container of Kara Coconut Cream.

I have a Kambrook Electric yoghurt maker that I picked up from my local Op Shop, but an Easiyo maker  (or any of the hot water yoghurt makers) works too (you may need to keep it in a warm place in colder weather)

I added the entire container of Kara Coconut Cream to the yoghurt container.



Step 2: Add the contents of 2 Ethical Nutrients Inner Health Plus probiotics into the coconut cream

Step 2:  Then I added the contents of 2 Ethical Nutrients Inner Health Plus Probiotic capsules into the Coconut Cream and gave it a really good stir.

I added the contents of 1 capsule when I had added just half of the coconut cream and then the 2nd one at the end.  I dont know if it makes any difference but this is what I did.  I stirred it really well to make sure the probiotic bacteria was evenly distributed throughout the Coconut Cream.



Step 3: Put the yoghurt container in the yoghurt maker

Step 3:  Next I put the lid on my yoghurt container and put it in the yoghurt maker.  If you have an Easiyo Hot Water Yoghurt maker, you push the plastic insert spacer down inside the Yogurt Maker as far as it can go. (Check the correct side is facing up). Then pour boiling water into the Yogurt Maker to the top of the plastic insert spacer and put your jar into the Yogurt Maker so that it sits on top of the plastic insert. The boiling water will rise part-way up the sides of the jar.  Then you cover it and leave it for 8 to 10 hours.


My yoghurt maker is electric, so you do not need to use boiling water.  You just switch the machine on, put the yoghurt container in the yoghurt maker and put the lid on.

Step 4:  I usually put my yoghurt maker on in the late afternoon and leave it until the next morning.  By the time I look at it in the morning, it has this amount of condensation that has accumulated in the lid.   Because my machine is electric, I worried that my yoghurt had got too hot and that it would be wrecked and would have spoiled.  But it hadnt.  It was AMAZING!!!



Step 5:  The finished product!   I was SOOOOO impressed with the outcome.  I really did not think it would be that easy.  I thought my Coconut yoghurt would be runny, not set and maybe, off from getting too warm and nothing like the type I have purchased in the past.

I was very wrong though!.  Just look at how amazing it looks! AND, the taste is absolutely creamy and delicious!!!

So why not give it a go!  All you need is the Kara Coconut Cream and the probiotic capsule (You can use their powder too).  I used 2 Ethical Nutrients Inner Health Plus capsules for 1 litre of Coconut Cream, so I am sure that if you are only using 500ml, you will only need 1 capsule.  Here is a link to the Inner Health Plus Capsules  

If you are using the Ethical Nutrients Inner Health dairy Free Powder, you will need 1/2 tsp per 500ml of Coconut cream.
