Beetroot, Pumpkin, Feta and Roasted Garlic Quick Bread

Main ingredients

500gm Normal or Gluten free flour
1 tbs Salt
40g Baking Powder (approx 2 & 2/3 tablespoon)
Good pinch of freshly ground black pepper
1 tbs chopped thyme
1 tbs chopped rosemary

This yeast free bread is easy to make & tastes delicious

65g unsalted butter, softened
380ml tepid milk of your choice


1 stalk of rosemary, removed from stalk
150g feta, cut into small cubes
150g pumpkin cubes, partly cooked in the microwave
150g beetroot cubes, partly cooked in the microwave
Flesh squeezed from 1 bulb roasted garlic
6 cherry tomatoes, cut in half


1 – Sift the flour, salt, baking powder and pepper into a large bowl and add the chopped herbs. Add the softened butter and, using your fingertips and thumbs, rub the butter into the dry ingredients until they resemble breadcrumbs.

2 – Make a large well in the centre and slowly add the milk. Gently mix the ingredients to form a dough, taking care not to over-mix.

3 – Once the dough is almost combined, but it still has wet and floury patches throughout, add the remaining ingredients, folding and lifting them through the dough until evenly distributed. Do not over-mix, or the resulting loaf will be tough.

4 – Divide the dough into 2 equal parts. Very lightly shape each into an oblong shape. With the smooth side facing up, place each dough piece onto a baking tray lined with non-stick baking paper.

5 – Using the palm of your hand, gently flatten each piece to 3cm thick and dust with white flour.

6 – Poke the halved cherry tomatoes and rosemary sprigs into the surface of each loaf. Using a large knife or dough scraper, cut a deep trellis pattern into each loaf, taking care not to cut all the way through. Set loaves aside to rest in a cool place for around 15 minutes.

7 – Bake for 20-25 minutes in a preheated oven set at 220C, until golden brown in colour. When you remove from the tray, it should sound hollow when the bottom is tapped.

8 – Remove loaves from the oven and transfer to a cooling rack.
